Homemade shortcrust, melting leeks and a creamy filling. Serve warm with a salad.

Shortcrust pastry

Rub the flour with the cold diced butter and the salt. Add the water, bring together into a ball without overworking, then chill for 30 minutes.

  1. The pastry case

    Preheat the oven to 180 °C. Roll out the pastry, line a 26 cm tin and prick the base with a fork.

    Soften the leeks in the butter for 10 minutes over low heat. Season with salt.

    Whisk the eggs with the cream, milk, nutmeg and pepper.

  4. Baking

    Spread the leeks over the pastry, pour in the filling, scatter with cheese and bake for 35 minutes.
