Roast chicken with lemon and thyme

Method

  1. Preheat the oven to 200 °C. Take the chicken out of the fridge 30 minutes before cooking.

  2. Put the halved lemon and half the thyme inside the chicken. Rub the skin with the butter and season with salt and pepper.

  3. Arrange the potatoes and garlic in the roasting pan, drizzle with olive oil, add the remaining thyme and sit the chicken on top.

  4. Roast for 1 hour 15 minutes, basting the chicken with its juices every 20 minutes.
